Title: Assistant Cook

POSITION SUMMARY:
Under the direct supervision of the Kitchen Supervisor, the assistant cook is responsible for supporting food preparation in compliance with food safety regulations, company standards, and consumer expectation. The assistant cook will maintain a clean, safe, and organized workspace, manage/record supplies effectively, and assist in controlling food costs and minimizing waste.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
Daily/weekly responsibilities:
- Manage the inventory of supplies and equipment.
- Ensure proper rotation and storage of food supplies.
- Check the quantity and quality of received products.
- Cook and prepare diverse meals, whether for everyday service or special events and guests.
- Sanitize and inspect galley equipment, kitchen appliances, and workspace to ensure they are clean and fully operational.
- Assist with sanitation of cooking equipment, such as pots, pans, and utensils.
- Help maintain and ensure the cleanliness of the kitchen and dining area.
- Supports staff members in performing daily tasks.

In the absence of Kitchen Supervisor:
- Supervise activities of cooks or workers engaged in food preparation.
- Determine production schedules and staff requirements necessary to ensure timely delivery of meals and services.
- Coordinate timing of food production activities.
- Assists staff members in carrying out daily activities.
KNOWLEDGE, SKILLS, CERTIFICATIONS AND ABILITIES:
- Knowledge of food safety & sanitation, keeping within health codes.
- Knowledge of federal, state, and local sanitation regulations.
- Ability to work in a clean and professional manner while under pressure.
- Ability to interpret food service safety regulations.
- Ability to make quick and sound decisions.
- Ability to demonstrate respect and courteousness to coworkers, Tribal employees, community members, and vendors.
- Ability to lift up to 50 lbs.
MINIMUM QUALIFICATIONS:
- High School Diploma or Equivalent plus one (1) year previous work experience in food services in a full service kitchen.
- Must obtain San Diego County Food Handlers card prior to beginning employment.
- Must have or obtain a CPR certification, and First Aid card within the first 90 days of employment.
- Must pass a TB test if requested.
- Must have a valid California Driver’s License.
- A background check will be required.
- Must acknowledge and agree to maintain a Drug-Free workplace (including marijuana) as a condition of employment with the Pala Band of Mission Indians. Must pass pre-employment and random drug testing during employment.
- Indian Preference will apply. The Pala Band of Mission Indians will give hiring preferences to fully qualified applicants that are Pala Tribal Members. Pala Band of Mission Indians is an equal opportunity employer.
